Slow Cooker Recipes: easy Winter warmers
Slow cookers are the ultimate kitchen accessory for the time poor and those with tiny kitchens- they are cheap to buy, they allow you to cook things even when you’re not at home and they have many purposes, from casseroles to soups! Below are some of my favourite recipes to create using the slow cooker. If you don't have a slow cooker or crock pot, you can use a heavy based lidded casserole dish in the oven, on a low temperature.
Not gonna lie - this recipe came about as a way of rescuing a failed attempt at Smokey BBQ Kangaroo. It's packed full of protein and iron, lovely summer vegetables and is made more filling by the simple addition of lentils.
I came up with this recipe when I was preparing for a cyclone (I'm not even kidding!). I needed to come up with something that would use up all my vegetables in case the power went out.
If you are not from Australia, you may not know that Kangaroos are so plentiful in the wild these days that they are actually culled each year in order to control the population, which means we are then left with a rather large supply of Kangaroo meat
One of my good friends is Italian, and his lovely Mama, like any good Italian mother, always gifts him with food and plants when he visits or when she comes to town. It's become a bit of a thing lately that she is now also including me in the tradition, and most recently I scored some gorgeous potted succulents, and 2 weeks ago, half a pumpkin from Uncle Silvini's farm!
This is an old favourite of mine that I always come back to, especially when the weather cools down. It pretty much cooks itself, it's that easy. It's handy to get rid of all the left over vegies at the end of their use by date in your fridge. When I make minestrone I just chuck in what I have at the time - you don't have to use these exact vegies but the below is the combo I think gives the best flavour.
Rich, slow cooked turkey bolognese topped with sweet pumpkin mash and a parmesan crust - and you can make it in less than 1 ½ hours! Perfect.
