Easy Banana Bread

Ingredients

4-5 med ripe bananas, chopped
1/2 cup olive oil
3 eggs, lightly beaten
1 tablespoon golden syrup
1/2 cup brown sugar
1 tsp vanilla
1 + 1/2 cups self raising flour
1 tsp cinnamon
2 tsp chia seeds
1 tablespoon pumpkin seeds
1 tablespoon pepitas


Method

  1. Grease and line loaf pan (21 x 10 x 6.5cm) and preheat oven to 160 degrees celsius
  2. Mash bananas (try using a potato masher instead of a fork - heaps easier!)
  3. Add oil, eggs, golden syrup, brown sugar and vanilla
  4. Sift in flour and cinammon and mix until just combined
  5. Pour into greased loaf and smooth the top
  6. Sprinkle the pumpkin seeds and pepitas evenly across the top 
  7. Bake for 1 hour and 5 minutes
  8. Cool for 10 minutes before turning out onto cooling rack

Optional variation - For a slightly less healthy but fancier presentation option, instead of finishing off with the pumpkin seed and pepita topping, omit these ingredients and try icing with cream cheese icing and garnishing with sliced banana and even a sprinkle of shredded toasted coconut, if you're feeling extra fancy. If you go with the sliced banana, splash a little extra lemon juice on the top when you're done to stop it from browning (if not serving straight away).

Cream cheese icing

Ingredients

200g cream cheese (the one in the block), softened
3/4 cup icing sugar
Dash lemon juice

Method

  1. Place cream cheese, icing sugar and lemon juice in a bowl
  2. Beat with electric mixer on low until combined and light and fluffy
